A coffee is never just a drink. When choosing between options, taste sits alongside social and environmental impact, and Panther Cafeterias, part of the Restalia group, makes that choice clear. They champion fair trade, organic and ecologically produced coffee grown by women in the Cauca region of Colombia, a region affected by armed conflict over the past eighteen years. Beyond a wide savory and healthy menu, the offer is completed by the famous ‘panteritas,’ small buttery croissants hand painted and decorated with a variety of toppings.

Panther Cafes today are found in Madrid, Valencia, Seville and Alicante. They blend contemporary design with distinctive products crafted for top quality. The menu relies on fresh, natural ingredients, and Restalia presents an urban concept that mirrors the latest culinary trends in coffee shops. Visitors can enjoy multiple varieties of double-certified organic coffee, sandwiches, natural juices, smoothies, salads and desserts. In short, it is a place to spend time at any moment of the day.

Its coffee grows at elevations above 1700 meters and is made from high-quality Arabica beans, delivering aromatic, sweet notes with hints of cocoa, panela and nuts such as almonds and hazelnuts. All offerings comply with organic farming and fair trade standards. A standout example of their specialty coffee is the Cold Brew, with notes of caramel and chocolate. Initially a summer option, it has been kept on the menu year-round due to popular demand.

Regarding the menu, original sandwiches were created by Restalia’s innovation team. Special sourdough breads are crafted with natural, non-GMO ingredients. The range also includes wraps featuring vegetables, roast beef and chicken curry, as well as an assortment of meat salads.

Panther is expanding in Madrid with two new openings while already operating nine stores in Spain and one in Portugal. The new Panther locations in Madrid are situated at two bustling hubs: Príncipe Pío Headquarters (in kiosk format and already serving customers) and O’Donnell Street, set to open in the coming weeks. The O’Donnell venue will be among the largest Panther establishments, alongside the ongoing operation on Paseo de la Castellana.

Restalia’s winning formula continues to grow: vibrant, modern spaces that serve organic and fair coffee, paired with a menu filled with healthy options. A small, symbolic gesture completes the experience: little “panthers” offered to guests as a friendly send-off.

No plastic for the environment

Promoting healthy baking and organic coffee means embracing waste reduction as a core value. Panther cafes actively pursue this goal, using 100% recyclable materials since their inception, ensuring that both packaging and household goods minimize environmental impact. A new milestone is on the horizon this year: a full move to eliminate plastic across their facilities, further reducing waste and supporting sustainability efforts.
