If oil-based vitamins are stored incorrectly, the oil can spoil and contain substances that increase the risk of developing cancer and atherosclerosis, says the chemist scientist, head of the laboratory of functional properties of biopolymers at the Institute of Biochemical Physics named after him. “If the oil is spoiled and stinky, it is dangerous. Such oils and, accordingly, oil-based vitamins contain carcinogenic – oxidation products. “They harm the body and increase the risk of developing cancer and atherosclerosis,” the expert noted.
According to him, when oil nutritional supplements deteriorate, the polyunsaturated fatty acids of the oil undergo oxidation, a radical process.
“Oxygen and heat are accelerated by sunlight. When this process begins, peroxides form in the oil, which are then converted into volatile substances (aldehydes and ketones) that have an unpleasant, rancid odor. “For this reason, it is important not to consume expired vitamins and to store them correctly,” he said.
It is best to store pharmacy vitamins in the refrigerator, as Semenova recommends. This way you can avoid simultaneous exposure to two dangerous factors: high temperature and light.
