Cod Zaragoza style – Knowledge
- 400 gr. unsalted and soaked cod.
- 300 grams of potatoes
- 1 large onion
- 3 tomatoes.
- Oil, pepper, salt and parsley.
- Take oil, finely chopped onion and peeled and diced potatoes in a large saucepan and fry them all together.
- When the potatoes are browned, add the skinless or seedless tomatoes and the cod pieces on top.
- Add a glass of water and season with pepper and parsley.
- Cover the pot and cook the cod whole for a few minutes until ready.
