- For four people:
- 1 turkey is about three kilos.
- 400 grams of pork tenderloin.
- 1 small onion.
- 1 tomato.
- 100 grams of ham.
- 1 tablespoon of flour.
- 150 grams of truffles.
- 1 water glass measure of oil.
- 1 glass of water.
- Pig oil.
- Ground pepper.
- 1 clove of garlic.
- Parsley.
- Leave of Daphne.
- Salt.
- Clean the turkey, remove the inside, salt and pepper the inside and outside.
- Let it rest until the next day.
- Prepare a filling with a well-carved pork tenderloin.
- Saute the finely chopped onion, add the very finely chopped peeled tomato, immediately add the ground beef seasoned with salt, a clove of garlic and crushed parsley.
- When they’re ready, add the ham, cut into very small cubes, and quickly remove the pan from the heat and turn everything.
- Separately, fry a tablespoon of flour with a little oil, then mix it with the filling.
- When temperature permits, stuff the turkey belly with 50 grams of finely chopped truffles. Sew and rest in a cool place.
- Put a glass of oil and water in a saucepan with the bay leaf and leave the turkey, which you sprinkled with lard before, to cook on low heat with the lid closed.
- During cooking, it is necessary to turn the piece several times so that the cooking is even.
- When the meat is tender, add the remaining 100 grams of sliced truffles to the pot and let it simmer for another 10 minutes.
