Spain’s best Russian salad of 2022 is proudly showcased in a restaurant setting where baked potatoes take center stage. Castru Gaiteru de Llanes from Asturias broke the Malaga dominance that had defined the previous three editions, bringing fresh energy to the San Sebastian gastronomic scene. This victory underscores how a well crafted version of the dish can redefine local tastes and spark broader interest in regional culinary achievements.

Pedro Antonio Noriega spoke to EFE about Castru Gaiteru’s eight-year journey since opening, noting that the Russian salad has remained a standout menu item due to its enduring popularity. The dish features warm potatoes baked to a tender finish, complemented by roasted peppers and olives. A rich mayonnaise anchors the profile, while tuna belly and pickled piparra contribute bright, tangy notes that crown the plate with balanced richness and a touch of regional character.

“We’re thrilled, it feels timely because we have delivered award-winning salads across Southern regions and beyond”, the winning chef joked as the prize was presented. The comment reflects a broader pattern observed by predecessors: the recognition tends to draw new patrons who want to try these standout preparations for themselves, helping to elevate the restaurant’s profile in a competitive culinary landscape.

In the 5th San Miguel Russian Salad National Championship, a strong slate of contenders included Antonio Pérez of Hevia (Madrid) and Rosa Macías of Bar FM (Granada); Jesús Bejarano of Becerrita (Seville); Alejandro Salcedo of EatyJet (Vitoria); Tomás Abellán of Bar Alegría (Barcelona); Rocío Maya of La Taberna de Noa (Fuentes de León, Badajoz); and Álex Ortiz of Bar Pepe (Somo, Cantabria). Each participant brought a distinct interpretation to the shared canvas of Russian salad, illustrating how regional flair can blend with classic technique to create memorable dishes.

Tomás Abellán later faced a challenge in reclaiming the title won by his father Carles Abellán (Tapas 24, Barcelona) during the event’s inaugural edition. The competition that day spotlighted the evolution of Russian salads across restaurants such as Candado de Golf, Chinchín Puerto, and Tragatá, three venues all located within the province of Malaga. The result highlighted how the tradition remains dynamic, with chefs continually refining texture, balance, and aroma to reflect contemporary palates while honoring a timeless flavor profile.
