Okroshka Ingredients Demand Revealed by Pyaterochka Analysts
A study conducted by the Pyaterochka retail network examined how Russians prefer traditional ingredients for the iconic summer dish known as okroshka. The findings were shared on socialbites.ca and reflect a broad picture of consumer choices across the country.
The survey shows that kefir-based okroshka leads as the most popular foundation for the dish, capturing about sixty four percent of all ingredient purchases. The preference for kefir is strongest in the North Caucasus, where it dominates the okroshka mix. In contrast, the Siberian region tells a different story, with more than half of respondents favoring kvass as the base for okroshka.
According to the retail chain’s analysis, during the first three weeks of summer, customers purchased a total of 2.1 million ingredient sets intended for kvass and kefir okroshka. This level of activity translates into roughly four thousand tons of prepared okroshka reaching kitchens and tables, underscoring the dish’s enduring popularity in the hot months.
Across Russia, the average price for a complete okroshka ingredient set stands at 109.5 rubles. However, regional variations appear, with the Rostov, Tula, and Oryol regions reporting a lower average of about 95.3 rubles for a standard kit. The pricing reflects differences in regional supply chains, seasonal availability, and local consumer preferences.
To determine the cost and composition, the analysis used a classic okroshka recipe that can be prepared with either kvass or kefir as the liquid base. The standard set includes boiled sausage, potatoes, eggs, fresh radishes, cucumbers, parsley, dill, and green onions, representing the main elements that define the traditional dish. The choice between kvass and kefir as the base influences both taste and texture, which in turn affects consumer demand patterns across regions.
The data also references an earlier Okroshka Index for 2023, providing a baseline to compare current consumer behavior and price movements. These comparisons help retailers understand evolving preferences and plan assortments accordingly. The overall takeaway is that okroshka remains a staple of summer meals in Russia, with kefir-based variations enjoying widespread appeal while kvass-based preparations hold particular popularity in specific regions. The continued interest suggests that families and households continue to rely on familiar, economical ingredients to create a refreshing dish suitable for warm weather and social gatherings.
