Salad time is here, but the day remains playful at the table. The ordinary mixed greens have gone in favor of vibrant options that stay light, tasty, and friendly to weight goals without leaving anyone hungry.

Contents

  • A packet of lettuce mix

  • 400 grams boiled shrimp

  • Eight crab sticks

  • two salad tomatoes

  • a ripe avocado

  • two eggs

  • Cook the eggs so that the yolks are firm. Allow them to cool.

  • Rinse the lettuce with a light shake and let it drain. Dress with oil, vinegar, and salt.

  • Wash the tomatoes and cut them into small pieces. Do the same with the avocado and the eggs.

  • Trim the shrimp, leaving a couple for garnish.

  • Mix all ingredients except the lettuce and then add oil and salt to taste.

  • To serve, lay a bed of lettuce and top with the remaining ingredients.

  • 300 grams of cherry tomatoes

  • Two tablespoons of peanuts

  • A bag of lettuce mix

  • Basil

  • Oil, salt and pepper

  • Place the cherry tomatoes in a pan with generous oil and simmer on medium heat for about an hour. Allow to cool.

  • Roast the pine nuts in a pan until fragrant.

  • Center the burrata on a plate and arrange the lettuce mix and candied cherry tomatoes around it.

  • Top with pine nuts and fresh basil leaves.

  • Finish with a drizzle of oil, a pinch of salt and a touch of pepper.

Pickled Partridge Salad

  • a lettuce

  • A loaf of stale bread

  • A tablespoon of old-fashioned mustard

  • a tablespoon of honey

  • Oil, vinegar, sugar and salt

  • Mix mustard, honey, salt and sugar to craft a dressing. Add oil and vinegar, mix and store.

  • Slice the stale bread and fry in plenty of oil until golden.

  • Chop the thyme.

  • Peel the pomegranate peel.

  • Julienne the lettuce.

  • Add the lettuce to a salad bowl and toss with some dressing.

  • Place the bread and partridge on top and garnish with pomegranate.

  • 50 grams of crispy onions

  • 30 grams of seed mix

  • 30 grams of raisins

  • 20 grams of honey

  • apple cider vinegar

  • salt and pepper

  • Steam broccoli briefly to keep it tender yet bright.

  • Toast the seed mix until aromatic.

  • Combine broccoli with seeds, raisins and crispy onions.

  • Prepare a vinaigrette with honey, vinegar, salt and pepper.

  • Toss broccoli with the dressing.

  • Arrange the bacon slices over the top to finish the dish.
