Preparation

Stir in the chopped chocolate until melted, then refrigerate until ready to use.

  • In a separate double boiler, melt the dark chocolate slowly while warming the cream. Combine the two warm components and whisk in the softened butter until a glossy, silky ganache forms. Let this cool slightly before using.

  • Unroll the cooled cake layer and spread it with the prepared chocolate cream. Reroll tightly and coat the exterior with a generous layer of the warm chocolate ganache. Chill for several hours so the structure sets firmly.

  • Roll the chilled log gently in a flat surface to form a smooth exterior. Trim the ends and decorate with stars cut from the remaining cake, dusting with powdered sugar and adding sugar pearls for a festive touch. Slice and serve after a final chill.
