The Galicia-inspired first course introduces a creamy mussel dish with leek pickles and a scallop served in a sparkling citrus juice. For the second plate, the chefs present a regional pairing that blends Hazas anchovy with cucumber and a ham and sardine pastry. The Asturian culinary star contributes a starter featuring creamy cucumber, while Solla unveils a first course featuring a rich sauce designed to complement the maritime flavors. The main course centers on a hake preparation with a light emulsion and diced Picón vegetables, while a second plate showcases a cow medallion with mashed potatoes and sautéed vegetables.

Pastry chef July White from Pomme Sucre in Gijón is responsible for the dessert, and a cocktail program will be led by a skilled shaker to round out the evening. Diego Cabrera of Salmon Guru in Madrid will bring his signature drinks to enhance the tasting, pairing flavors with the courses and creating a cohesive dining experience.

Following the agreement between Rotary Club Madrid Serrano and Mercy Ships, the proceeds will support the operations of the hospital ship and its global relief mission. The funds aim to boost medical capacity on the ship, enabling it to deliver essential care in underserved port communities around the world.

In addition to supporting the hospital ship, the collection will fund medical equipment purchases and scholarships for health professionals working in local communities, including nurses and doctors. The event highlights the impact of targeted philanthropy, linking fine dining with tangible improvements in global health infrastructure.
