However, the A1 form leads to the formation of toxic substances that cause inflammation in the body. According to the World Health Organization, 30% of the world’s population has adverse gastrointestinal reactions to type A1 milk and dairy products. Milk containing only the A2 form, on the contrary, is well absorbed and has a beneficial effect.
The content of the A1 and A2 forms of β-casein in milk depends on the genotype of the cow. The new technology made it possible to create a herd of cows that produce only A2-easily digestible milk. The production of A2 type dairy products has already been established in the Krasnodar Territory: yoghurt, sour cream, cheese and cottage cheese with a high content of casein.
The type of milk can be determined quickly using a testing system. The new technology is simple and low cost.
