Nutritionists tell us what an ideal lunch looks like

British nutritionists Günter Kuhnle from the University of Reading and Duane Mellor from Aston University with healthy nutritionist and author Rob Hobson said The Daily Mail says the ideal lunch contains a large portion of vegetables. It should also include protein and starchy foods.

According to registered dietitian Rob Hobson, the most nutritious lunch option is a salad with pasta or whole wheat noodles as a side dish. Protein source can be chicken, tuna or legumes. The expert also recommends making your own salad dressing from sesame seeds.

Duane Mellor also argues that a healthy lunch should include some protein and starch, as well as plenty of vegetables. The nutritionist recommends using leftovers from last night’s dinner to prepare lunch. This will prevent food waste and evening overeating.

Kim Pearson, a London-based nutritionist, also suggests using leftovers from dinner to make lunch. He recommends eating Mediterranean vegetables with spinach, hard-boiled eggs, salmon fillets or fermented soybeans. He also recommends not neglecting the healthy oils found in olive oil and pumpkin seeds.
