American scientists from the University of Nevada, Las Vegas (UNLV) have discovered that properly cooked potatoes can provide significant benefits to patients with type 2 diabetes, as well as promoting weight loss and normalizing heart function. The research was published in the official journal website scientific institution.
The experts’ conclusions are based on the results of a trial involving 24 people with type 2 diabetes.
Half of the participants were given a baked potato weighing about 100 grams each day as a side dish or snack. The other half served as a control group and received a similar amount of calories and carbs in the form of white rice.
The study lasted 12 weeks, which is the minimum duration to show changes in glycemic control and cardiometabolic health.
The results showed that the volunteers who ate the potatoes experienced a modest decrease in blood sugar levels, improved body composition, decreased waist circumference and normalized heart rates.
“The results of our study suggest that white potatoes may be beneficial in the diet of patients with type 2 diabetes if they are replaced with other foods with a high glycemic load, such as white rice. Therefore, diabetics should not avoid potatoes,” the researchers noted.
According to scientists, potato peels are of particular nutritional value to humans, as they contain a lot of beneficial potassium. They also contain a certain type of fiber called “resistant starch”, which has been shown to improve glucose control, lipid profile and satiety.
