Moreover, how much charring is the stronger it is, the more active glycation occurs and, accordingly, the more harmful substances are formed,” explained the expert.
According to him, not only frying over an open fire, but also any other method, for example, in an air fryer or in a pan, can contribute to the formation of these harmful substances. However, its harmful effects on the body can be reduced.
“The amount of such compounds can be reduced at the meat processing stage. Thus, marinating vinegar or lemon during the cooking process helps reduce glycation. It is also important with what and how to eat this meat. Sauces, ketchup, mayonnaise and various foods rich in carbohydrates put an excessive burden on the body and especially the gastrointestinal system. You can facilitate the work of the gastrointestinal tract by adding plenty of fiber to meat: fresh herbs, vegetables. This will make it easier for the body to cope with the load,” concluded the expert.
