- 1 kg lamb intestine
- 1 medium onion
- 2 cloves of garlic
- 1 bay leaf
- 1 glass of white wine
- 1 glass of cognac
- black pepper
- Parsley
- 1 dl olive oil
- Salt
- First of all, the intestine of the lamb must be thoroughly cleaned so that it is completely free of dirt.
- This step is necessary for the final result to be in place.
- Peel and crush the onions and garlic.
- Then add the chopped parsley.
- In a saucepan with boiling salted water, cook the lamb shank with black pepper, minced onion and garlic, bay leaf, cognac and white wine.
- When ready, it is filtered and left to rest for about an hour.
- After the hanks have cooled, they are dried and cut into pieces.
- Finally, heat plenty of oil in a pan and when it’s very hot, cover the pan and fry the chives until golden brown.
- When serving, you can sprinkle a pinch of chopped parsley on it.
