It’s best to prepare the dough the day before baking to allow it to rest long enough. For this, we melt the butter that we will cut into small cubes beforehand. We can melt it in the microwave for twenty seconds or in a saucepan over medium heat. We add sugar and honey to the butter. We mix everything until we get a mixture, add the spices and let it rest for about 10 minutes.
We will prepare the dry ingredients in another bowl, so we will sift the flour and add the baking soda. We will add the wet ingredients and egg to this mixture. We will mix it little by little until we obtain a homogeneous mass. After we finish, we will wrap it in stretch film and leave it to rest in the refrigerator. The longer the better.
Now all that remains is to shape the cookies. The dough may be a little hard as it cools in the refrigerator, so you will need to knead it little by little by hand to keep it at room temperature. When it becomes easy to shape, we spread it on wax paper or a baking tray with a rolling pin. The thinner we make the layer, the crispier the cookies will be.
