Synesthesia, according to the Royal Academy Dictionary, is described as a union of two images or sensations drawn from different senses. This idea becomes the core concept behind a bold move in Alicante: Perfect Palace is expanding its business footprint by entering the hospitality scene with a new venture described as immersive gastronomy. The goal is to attract a curious audience by blending dining with sensory experiences. A strategic alliance has been forged to bring in chef Kiko Moya, famed for his two Michelin stars and multiple Repsol suns, to Madrid.
A venue is set to open at the Caleido shopping center, along Castellana, on December 20, and the project has already begun to generate buzz during its early previews.
Jorge Palacio, who leads the Sinestesia concept, recalls that the idea emerged during a family trip. They discovered an organization in Colombia that combines different sensory experiences, sparking research and development. They found that only a handful of restaurants worldwide offered something similar, with the only Spanish example charging over 1,200 euros for a similar experience. The team believed this idea could be democratized, making the experience accessible to a broader audience. In this project, the closed tasting menu with wine pairing is priced at 270 euros.
Beyond the hospitality venture, the Palacio family group operates across several sectors, including car dealerships, tourism properties in Alicante, and ventures in technology. The decision to explore hospitality came after seeking expert guidance from APS consultancy, which connected them with Kiko Moya. The chef eagerly joined the project, crafting the full menu and providing staff training.

Seven worlds
Synesthesia offers a journey through seven realms within a single bowl, enhanced by audiovisual projections that fuse taste, sound, and sight. The experience takes place in a dedicated space designed to host just 16 restaurants, where technology plays a crucial role. The first menu draws its name from this concept: How do the colors taste? The plates are meant to echo the visual sensations. A maître d’ and a team of waitstaff guide guests, while an actor leads the two-and-a-half-hour journey. Palacio’s team contributed to brand development, event design, and the overall audiovisual narrative, with groupoidex steering these creative elements. The visual storytelling was coordinated by Socarrats Movies from Valencia.
Technology partner Epson was chosen for its projection capabilities, with a focus on creating a fresh, distinctive dining experience in gastronomy. The project highlights wall, ceiling, and table decorations as part of the immersive environment. The organizers aim to deliver something new and exceptional in a field that increasingly seeks unique, privileged experiences.
If initial reactions align with expectations, the plan includes reproducing the concept in other locations. Possibilities extend to another major Spanish city such as Barcelona, and the team envisions expanding to other European capitals where there is a receptive audience. The project is designed to scale if the reception is favorable.

While the venue welcomes all guests, Jorge Palacio believes the experience also holds strong appeal for business groups and circles of friends seeking a distinctive entertainment option. After more than a year of careful preparation, Sinestesia has already hosted several private sessions; however, the official opening is anticipated in the coming days.
