  • a can of roasted peppers
  • a jar of olives
  • mayonnaise
  • liquid oil
  • salt

How to prepare potato fritters and minced meat

The first step is to cook the potatoes with their skins on and then peel them after they have cooled slightly. Once peeled, mash them or run them through a grinder and set the mixture in the refrigerator while the other components are prepared.

Cooked potatoes with the skin on are peeled for making mashed potatoes, ready to be used in the filling. This approach keeps texture distinct and helps the final cake hold its shape during assembly.

To make the cake filling, finely chop the onion and sauté it in a pan with a small amount of oil. When it becomes translucent, add the mushrooms (washed and sliced), the minced meat, and the fried tomatoes. Season with a pinch of salt and simmer over low heat until everything is well combined. Once cooked, remove the pan from the heat and let the mixture cool. It can also be stored in the refrigerator for later use.

For a healthier option, turkey can be used in place of beef in the filling. This keeps the dish lighter while preserving flavor.

To assemble the cake, mix the cold mashed potatoes with mayonnaise until the mixture becomes a smooth, homogeneous paste. Spread this dough onto a clean, slightly damp cloth. Layer the meat and tomato filling evenly across the dough, then roll it up with the filling inside.

Finally, garnish with strips of roasted peppers and olives. Another appealing presentation is to add slices of boiled egg and grated carrot on top. If children are present, tossing in some cooked corn kernels adds color and a touch of sweetness to the dish.
