According to the doctor, freezing and heating white bread (for example, toasting it in a toaster) reduces its glycemic index by half. This is because more retrograded starch is produced during such processes. This is a type of resistant starch that acts like fiber, which is not fully absorbed by the body and is processed by beneficial gut bacteria.

Thanks to the retrograde starch in its composition, bread is digested more slowly, which provides better satiety after eating and prevents blood sugar from rising suddenly.
