When it has cooked a little, add the chopped eggplant pulp and mix until everything is integrated. Pour the tomato sauce and mix, then fill the eggplants with this mixture. After preparing them, we cover them with béchamel and grated cheese and put them in the oven at 200 degrees for about 10 minutes.

Sea bass is one of the seasonal fish of January. It can be made in many ways, but we chose the option of baking sea bass with potatoes because of its ease of preparation.

  • Onion

The first step is to peel the potatoes and cut them into slices, then we will do the same with the onion. We put both in a pan with a little oil and let them cook over medium heat for a few minutes. Meanwhile, we heat the oven to 190 degrees.

We place the potatoes, onions and rosemary on a baking tray on a greased base, and place the clean sea bass on top, with the fillets cut so that they do not remain uncooked. We can put lemon slices on it to intensify its flavour. Add salt and a little more oil according to your taste and leave it in the oven for about 25 minutes until it reaches the desired point.

Cauliflower is a versatile vegetable. It’s also healthy. You can prepare many recipes very simply with this seasonal vegetable. This time we will choose cauliflower cream.

Contents for four people:

  • Cauliflower

  • Onion

  • a leek

  • 30 milliliters of extra virgin olive oil

  • One liter of vegetable broth or water

  • 5 milliliters sherry vinegar

  • 5 milligrams of butter

  • Salt

  • ground black pepper

First of all, you need to cut the leaves of the cauliflower, separate some of the florets as a whole and cut the rest. Then wash the leek and onion and cut them into slices.

Put some oil in a pan and fry the onion and leek with some salt. Once it turns golden brown, add the chopped cauliflower and a liter of water or vegetable broth. Cook on low heat for 15 minutes. After this time, add the rest of the cauliflower and let it cook for another 15 minutes.

While waiting for the cauliflower to be ready, we heat the butter and add the reserved cauliflower florets. Stir until golden brown and add sherry vinegar to taste.

Finally, we grind the cooked cauliflower until we obtain the desired texture and add salt and pepper according to taste. We place golden cauliflower florets and some chives on top of the cream.

Cod with tomatoes

  • 400 grams of fresh cod

  • 150 grams of onion

  • 2 cloves of garlic

  • 450 grams of crushed tomatoes

  • extra virgin olive oil

  • fresh parsley

  • Salt

  • ground black pepper

We put 25 milliliters of oil in a pot over medium heat and after it gets hot, fry the cod fillets on both sides, including the sides, for a minute and leave them aside. Add the finely chopped garlic and onion to the same pot and sauté over medium heat until the onion softens.

Then we add crushed tomatoes to the garlic and onion, along with some ground pepper and salt. Mix it and let it cook on low heat for 15 minutes. At the end of this time, we add the reserved cod and let it cook together for about 3 minutes until it is ready to serve. Finally, we can put some parsley on it to give the finishing touch.
