Mountain garlic oil – Knowledge

- 500 grams of potatoes
- 8 cloves of garlic
- 2 eggs
- 1 dl of extra virgin olive oil
- 1/2 liter of water
- pinch of salt
- Cook the peeled potatoes in seasoned water, drain and pass through a potato masher.
- Take the puree in a pan and add two egg yolks in the middle, while adding the oil little by little, mix it with a spoon.
- Add the crushed garlic and adjust the salt without stopping the mixing.
