The food poisoning outbreak that injured more than 50 people in the United States traces its origins to morels. This was reported by MedicalXpress.

The U.S. Food and Drug Administration (FDA) investigated a serious illness outbreak linked to the Dave’s Sushi restaurant chain. The analysis revealed that undercooked or raw morels were the likely cause of the poisonings in March and April 2023. 51 poisonings and two deaths were reported.

As a result, the agency issued its first guidelines for preparing morels. Experts noted that the toxins found in morel mushrooms that could cause poisoning have not been fully investigated. Proper cooking can help reduce toxin levels, but even then there is still risk.

This is because morels may contain hydrazine, a chemical often used in pesticides and rocket fuel. Marian Maxwell, president of the Puget Sound Mycological Society, said hydrazine increases the risk of cancer. Cooking evaporates the hydrazine, but not completely, so some people still experience adverse reactions, she said.
