Prices for sushi and rolls in Russian restaurants and sushi bars will rise by 14 percent in the coming days. The newspaper reports this “News”.
The reason for the price increase is the continuous increase in all raw material costs since June this year. Thus, salmon prices increased by 25 percent in September, and eel and tuna prices increased by 20 percent since June. The recent increase in chicken prices has been between 30-50 percent. The publication notes that the extremely large catch of pink salmon does not lead to a decrease in its value.
In addition, the depreciation of the ruble caused an increase in the price of all imports, including those related to Japan. Thus, the price of nori, shrimp and eel increased by more than 30%.
According to experts, one of the reasons for the increase in prices of sushi and rolls may be a shortage of salmon. There are only two fish factories in Russia that grow salmon. One of them is currently receiving preventive treatment. Prices increased by 10-15% as the demand for salmon remained the same but its quantity decreased.
