Researchers at Osaka University in Japan found high levels of sulfur in 22 vegetables. Results published in Food Chemistry.
Sulfur is found in vegetables such as onions and garlic. Thanks to this, products have a positive effect on human health – sulfur plays the role of an antioxidant. The scientists set out to accurately measure the content of reactive polysulfides (polysulfide compounds) in 22 vegetables, including onions and garlic.
To do this, the authors used the method of mass spectrometry using the method of dilution of stable isotopes. As a result, high levels of reactive polysulfides can be found not only in leek vegetables but also in cruciferous vegetables (Brassicaceae) such as broccoli and cabbage.
The authors hope that the results of their work will help develop products and supplements rich in active polysulfide.
