This 2023, the Torres Brothers wanted to join Santos Bregaña, one of the international reference voices in ceramic design. Artist from Navarre with a solid and famous career as a table creator for the world’s best chefs including the brothers Ferrán Adrià, Martín Berasategui or Roca “Tear peas from Maresme”, one of his most outstanding creations, special and in a way dreamy: Sélavy pottery.
Designed by Bregaña based on the artist’s work and thinking Produced by Marcel Duchamp and house luxury French Bernardaud porcelain, The Sélavy collection aims to represent the reliefs drawn by nature. Like a tracing paper that replicates the concentric waves produced by a stone. Prints for a short time after falling into water. There are no straight lines, only curved shapes filled with movement. It’s a concept that gives the Torres Brothers detailing an illusory swaying feel that fills the plate with dynamism.
2023 new spring menus
Coinciding with spring, Torres present Dos Cielos Madrid’s new seasonal menu offer: Classic Menu consisting of nine dishes and Tasting Menu containing twelve delicious moments.
On the one hand, the Classic Menu has these suggestions: goose lioness; sweet potato beet, sobrassada and honey; Moqueca fish dish; Listed Shrimp and Carrot Pickles from Huelva; cod tripe to Madrileña; Crispy Iberian Pork Shoulder. As for desserts, there are three delicious suggestions: Yeast and Oil; Pear and Star Anise and El Cielo to close.
Tasting Menu, a selection of bread and oil; goose lioness; sweet potato beet, sobrassada and honey; moqueca; Exclusive and famous Teardrop Peas from Maresme; Strip in red pepper; Kalkan Beurre Blanc and Caviar; Pigeon Rice “Faisandage”; Breastfeeding Boy’s Shoulders and Pickles. Desserts: Yeast and Oil; pear and star anise; Matcha Tea, Pickled Lemon and White Chocolate; and the sky.
The price of the Tasting Menu is 105 Euros and the pairing is 50 Euros.
The Classic Menu costs 75 Euros and the pairing is 35 Euros.
