The definitive recipe for making the perfect sponge cake

Biscuits are one of the most delicious desserts or snacks in existence. They are well prepared, appealing to the palate, and although they may seem very calorie-dense, there are recipes that allow us to taste all their flavors with less calories.

But the secret to making a good cake isn’t calories, it’s making it as fluffy as possible. With our recipe you will make this delicious dessert perfectly, and best of all you will only need a microwave oven.

A standard microwave sponge cake won’t get the toasty color characteristic of traditional muffins, but the result will still allow us to enjoy a dessert or breakfast to brighten our day.

  • 3 eggs

  • 1 plain yogurt

  • Olive oil (same amount as yogurt)

  • Sugar (twice the amount of yogurt)

  • Salt (just a pinch)

  • Butter (or oil) to grease the pan

  • Whisk the eggs and yogurt in a large bowl, mix everything well. Add oil, sugar and salt and continue whisking until smooth.

  • Then we add the flour and yeast little by little and continue to knead the dough without leaving any lumps.

  • When we’re ready, all that’s left is to spread the muffin tin with butter (or oil, if appropriate) and prepare it for the microwave.

  • Pour the mixture into the mold, put it in the microwave and program at maximum power for 8 or 9 minutes.

  • After this time, our cake will be ready, but we can sprinkle powdered sugar on it. If we are going to do this, we can slightly reduce the amount of sugar we use during the preparation of the mixture.
