British nutritionist Emily Leeming said The Daily Mail suggests that eating kimchi sprouts, legumes, and drinking green tea may lower blood levels of LDL cholesterol.
The doctor explained that after the age of 40, LDL cholesterol levels in the blood rise more easily because the body is less effective at getting rid of excess cholesterol. LDL is a class of lipoproteins (cholesterol-carrying molecules) in the blood that are the most atherogenic and have the capacity to accumulate in the atrial walls. High levels of this type of cholesterol can be a problem at any age, because the narrowing of the lumen of the arteries increases the risk of cardiovascular disease.
Bacteria in the intestines are thought to convert bad cholesterol into coprostanol, an indigestible, waxy solid that is then eliminated from the body. To stimulate bacterial activity, the nutritionist recommends consuming kimchi, a Korean dish consisting of pickled (fermented) vegetables seasoned with hot spices.
Leeming also talked about the benefits of legumes (peas, beans, lentils). The fact is that they are rich in fiber (indigestible dietary fiber), which helps digest and absorb fats.
