Three mushroom recipes to enjoy in autumn

Seasonal foods can never be missing in good gastronomy. One of the highlights of autumn is mushrooms. It’s not easy to resist the best flavors cooked with these succulent mushrooms. countless varieties and we offer a variety of ways to prepare.

  • Contents: chanterelles (300 g), three eggs, two garlic cloves, salt and thyme
  • How to clean chanterelles: Use a knife and damp cloth, scrape off any foreign material or parts with the first tool and clean the ‘hat’ area with the cloth. Also use a brush to go over all the cracks.
  • Preparation:

  • Fry the garlic in oil without burning it.

  • Add the cleaned and (if necessary) cut chanterelles. Add salt and spices and let it cook for 15 minutes.

  • Beat the eggs with a pinch of salt and add. Reduce the heat to low and let it set little by little.

  • Contents: Three buns, three garlic cloves, salt and parsley or thyme
  • How to clean boletus: Use a brush to remove any soil residue, reaching into all the nooks and crannies left by the shape of the mushroom.
  • Preparation:
  • Cut the boletus into pieces or slices.

  • Put the oil in a pan, add the boletus and chopped garlic.

  • Add the spices (parsley or thyme) and let it cook for ten minutes.

  • Contents: chanterelles, potatoes, onion, pepper (green or red), ripe tomatoes, garlic (2 cloves), chopped parsley, thyme, rosemary, salt, white wine, sweet paprika, bay leaf, chicken stock and olive oil
  • How to clean chanterelles: It is the only type of mushroom that can be washed with water due to its high humidity. However, the ideal is not to do it this way, but to remove all stuck residue using a damp cloth.
  • Preparation:
  • Cut the chanterelles into four pieces and remove the stems.

  • Sauté pepper, onion and garlic for 20 minutes.

  • Add grated tomatoes and pepper. Add the white wine and let it cook until the alcohol evaporates.

  • Add chanterelles and potatoes (peeled and in pieces), add spices and cook over low heat for half an hour.
