In a new study, nutritionists concluded that the increased risk of diabetes may be due to the method of preparation and related products, not the potato itself. The study was based on a health and nutrition database of 54,000 Danes. “In Denmark, people eat potatoes prepared in many different ways, and in our study we were able to explain the cooking method. When we separated boiled potatoes from mashed potatoes, french fries or chips, boiled potatoes were no longer statistically associated with a higher risk of diabetes, it didn’t affect it at all,” explained the study’s co-author. by Practical Pokharel.
