To prepare the “best dinner in the world” – cutlets with mashed potatoes – you need to follow a few simple rules. This was told to “socialbites.ca” by Maxim Kuznetsov, the chef of the “Kitchen in the Region”.
According to Kuznetsov, those who choose the right potatoes get good mashed potatoes.
“To make delicious mashed potatoes at home, you must first choose the potato you will cook. It will be more crumbly due to the low starch content, which is good for the consistency of the dish – the mash will not be too thick and pliable, ”said the chef.
He added that if a little warm milk and butter are added to the boiled potatoes, the perfect puree will be obtained, but he does not recommend using eggs and spices.
“Take a pusher and remember the ingredients well so that they mix evenly and there are no lumps in the puree. It is better not to use a mixer, but the dish will be very sticky, although it will mix faster, ”said Kuznetsov.
As for cutlets, their chefs recommend cooking them with ground beef, 50% beef and 50% pork.
“First, it’s better to get lean from the hip parts, like the hips, for example. The second is fatter than, for example, in height. So you get a good meat-fat balance, and the cutlets will not be dry, ”explained Kuznetsov.
From a small amount of bread soaked in milk, the cutlet becomes softer, and the egg helps to bind the minced meat.
“If you want seasoning, add fried onions to the meat before grounding it,” the chef said.
Fry cutlets “preferably in flour”, according to the chef. And it is best served with lightly salted cucumbers and a small amount of ketchup.
