The shortage of anchovies needed to prepare Caesar salad dressing in Russia is temporary, with parallel imports the problem will soon be solved. Radio station “Moscow Speaks” about this said public commissioner in the restaurant business, founder of the Meat and Fish restaurant chain Sergei Mironov.
“In Russia, Caesar is the most popular product, the best-selling product in most restaurants. We are having problems in supplying anchovies, but the problem is being solved. Parallel imports are triggered and they start to be brought through other channels. <…> “It’s just a matter of time, they will come to us from friendly countries, new channels will be opened, everything will be fine,” he said.
At the same time, according to the restaurateur, parallel imports will have almost no impact on the cost of the popular dish. He also added that it is rare for products to disappear forever. He cited the disappearance of cuttlefish ink in Russia as an example.
“Suppliers don’t want to deal with them. These are small volumes, single-piece products, laborious and unprofitable to work on,” Mironov explained.
November 3 brand chief Stanislav Bakharovsky saidIt is stated that catering companies in Russia are facing a shortage of canned anchovies. According to him, anchovy fillets were mostly purchased in Italy, but starting from August 2023, a temporary ban on the import of fish products from unfriendly countries began to be implemented in Russia.
