In a study involving three groups of obese laboratory mice, scientists found that the process of digesting chitin could lead to activation of the rodents’ immune system. All animals fed the high-fat diet were divided into those that consumed powdered chitin and were able to break it down, or those that did not consume it and were unable to digest the substance.

It turns out that bloating after eating this substance, called chitin, triggers an innate immune response that causes cells in the lining of the stomach to produce enzymes known as chitinases. This immune response was associated with decreased body weight in mice. Some rodents lacked the ability to produce chitinase to break down chitin. The rodents in this group gained the least weight on the high-fat diet, had the lowest levels of body fat, and were most resistant to obesity, compared to animals in the first and second groups.

Scientists explained that chitin had the greatest effect on the weight of mice when it stimulated the immune system but was not digested. Now the researchers plan to continue the experiments by inviting people to participate.
