Russian scientists tried to find out whether consuming monellin and brazzein, plant protein-based sweeteners, could be harmful to health. To do this, they evaluated the toxicity of these compounds on guinea pigs, rats, and mice. Monellin and brazzein solutions were administered to the animals intravenously. The results showed that the compounds did not cause pathological changes in the lungs, liver, heart, kidneys, brain, small intestine, stomach, colon, ovaries and testicles. Additionally, the animals showed no signs of poisoning or weight gain. Additionally, the compounds do not have allergenic or mutagenic properties.
The authors of the study believe that their work opens up broad opportunities for the use of monellin and brazzein as alternatives to sugar in the food industry. Using these substitutes can reduce the risk of dangerous diseases associated with both sugar and artificial sweeteners.
