Scientists from Tulane University have discovered that replacing beef with chicken and cow’s milk with plant-based milk can significantly reduce carbon dioxide emissions into the atmosphere and at the same time improve the quality of the human diet. The research was published in the journal Nature Food.

The study’s authors analyzed dietary data from more than 7,700 Americans. They identified the foods with the biggest impact on climate and then modeled the impact of replacing them with nutritionally similar, lower-emission foods.

Scientists have noted that food production accounts for 25-33% of greenhouse gas emissions in the United States, with the main contribution coming from cow farming. The biggest projected emissions reductions were seen in pastas, burritos, sandwiches, burgers and other popular dishes that replace beef with chicken or plant-based meats. Replacing cow’s milk with plant milk, such as almond milk, had a similar effect. The shift to low-carbon foods also led to significant improvements in diets, according to modelling.

“This study shows that reducing carbon dioxide emissions from food is economical and does not require a complete lifestyle change,” the scientists said.
