When choosing a kitchen knife, it is important to pay attention to the material it is made of. In an interview about this HABER.ru said construction expert Fedor Vasiliev. He says carbon steel has a good cut and retains its edge for a long time, but can give foods an unpleasant taste and can also rust in a humid environment.
“Stainless steel knives are both a budget-friendly and functional solution as they remain sharp for a long time due to the addition of chrome to the metal and do not require special maintenance. Titanium knives are close to ceramic knives in terms of efficiency, but they cut much worse: experts note the property of their cutting edges to “press” the product rather than cut it, Vasiliev continued.
Also, in his opinion, it is worth looking at metal hardness indicators using the Rockwell method. The softer the material from which the knife is made, the easier it is to sharpen it at home. The expert noted that, for example, the hardness of European knives is 54-57 units, while Japanese knives are 60-67 units.
