“At the same time, depending on the manufacturing standards, the product containing the preservative will be absolutely safe. In fish preserves, caviar, preservatives are essential to prevent spoilage associated with yeast and mold growth. By the way, I remind you that an open jar of caviar should not be stored in the refrigerator for more than 1-2 days, ”explained Yulia Budovskaya.

As for fish food, good manufacturers also make them without preservatives. In order for the delicacy product to be stored for a long time, it is pasteurized. In other words, live bacteria are killed by heating. Today’s technology allows you to choose a pasteurization mode that can preserve the taste and nutritional value of the riet, but at the same time guarantee a high level of safety.

“The only acceptable additive in riets is an antioxidant, which is ascorbic acid. The same “ascorbic”, well-known since childhood, said the technologist.

Speaking of canned squid and octopus in their own juice, they are safer in composition than shellfish in this or that sauce. In addition to salt and spices, they should not contain additional components.

“Often, many people’s favorite tomato sauce has artificial flavors. By the way, according to the regulations governing responsible producers, the bank must be filled with 70% seafood. Therefore, if you shake the jar near your ear, there should be no noticeable hum, ”said the expert.

Cod liver also does not need extra ingredients. Just three spices are enough: bay leaf, salt and allspice.

“When it comes to packaging, many mistakenly think that it is better to buy the product in a glass jar, they say it is fresher and you can see it. But the container is not an indicator of the freshness of the product.
