Make sure it’s very cold before using it on French toast. Place in a large bowl and add cinnamon powder, vanilla extract and lemon zest.
Cut the bread into slices about 2 cm thick. It is important to use daily bread, as its texture is firmer and will absorb the horcha better without falling apart.
Dip the slices of bread in the horchata mixture for about 2-3 minutes on each side until they are thoroughly wet and do not fall apart.
In another bowl, beat the eggs with a pinch of salt. If you wish, you can add sugar to sweeten the French toast.
Remove the bread slices from the horchata and drain gently. Next, dip it in the egg mixture, making sure it’s well coated on both sides.
Turn on the air fryer and preheat it to 180 degrees.
Place the breaded French toast in the fryer basket with space between them for proper air circulation. Spray the torrijas with some cooking spray. Bake for 6-8 minutes on each side until golden and crispy.
