However, achieving this reduction in carbohydrates through our diet can be more complicated, especially since it’s not easy to give up on good artisanal bread or cakes and biscuits.

Chocolate chip cookies

240 ml (110 g) almond flour

Half tablespoon of baking powder

80ml (70g) erythritol

70 g unsalted butter

1 large egg

1 tablespoon of vanilla extract

28 g sugar-free pastry chocolate chips

In a small bowl, mix the almond flour, baking powder and salt. Reserved.

In a separate large bowl, combine the powdered sweetener and butter with a low-speed mixer. Add the egg and vanilla and mix until well combined. Add dry ingredients and mix on medium speed. Add the chocolate chips to the mixture until they are well dispersed.

Spread a sheet of plastic wrap approximately 30 x 23 cm (12 x 9″) on the counter or table. Place the dough in the center. Form a roll about 5 cm in diameter and 25 cm in length. Leave the dough wrapped in plastic. wrap for at least 3 hours or overnight and cool.

Preheat oven to 180°C (350°F). Cover a baking tray with baking paper.

Divide the dough into 12 equal slices and place on the baking tray. Gently press each slice to flatten it slightly. Make sure there is a distance of at least 1 cm between them. Bake on the middle rack of the oven for 8-10 minutes, until the edges are golden brown and the cookies are melted and lightly dispersed.
Lemon cake

Coconut flour 50 grams

Mix the coconut flour with the artificial sweetener we use in a bowl. Then add the salt and baking powder and mix thoroughly with sticks so that there are no lumps.

Add the eggs and mix well, a dough will form as the coconut flour absorbs too much liquid. Add the juice of a lemon along with the rind, add only the yellow part as the white part is bitter. Also add the melted butter and mix thoroughly until a homogeneous mass remains.

After it reaches the consistency of dough, we take it into a mold with greaseproof paper and bake it at 180ºC for 40-45 minutes.

Chocolate mousse

200 ml whipped cream

In a large bowl, add the whipped cream and beat with a mixer or several sticks until peaks form.

Add cocoa and stevia and salt.

Keep beating until the peaks get bigger and harder and you’re amazingly done.
