Hake a la Benabarre – Knowledge

- 4 hake Supreme with 200 g spineless each
- 3 green peppers
- 1 yellow bell pepper
- 1 red bell pepper
- 2 onions
- 4 cloves of garlic
- Parsley
- Ketchup
- Lemon
- soft bread crumbs
- Salt
- olive oil
- White pepper
- White wine
- We heat the oil in a pan, in which we will fry the garlic, onions and peppers, which we cut into julienne strips.
- Add the white wine until it has reduced completely and allow the tomato sauce to simmer for five minutes as a whole.
- In a bowl, place the sauce on a bed of fried vegetables, salted raw hake, white pepper and lemon juice, breadcrumbs and parsley, and some oil.
- We put everything in the oven until gratin.
- Approximate cooking time is four minutes at 200ºC from the moment it starts boiling.
