Scientists from the University of California at San Jose (USA) found five foods with the highest amount of prebiotics. These are dandelion greens, yams, garlic, leeks and onions. The results of the study were presented at the International American Nutrition Society Nutrition Congress 2023.
Prebiotics are certain types of fiber that are not digested or absorbed in the upper gastrointestinal tract, but are fermented by the microflora of the human large intestine and stimulate its growth and vital activity.
Consuming these substances helps regulate blood sugar levels, absorb minerals better, and also strengthens the immune system and promotes healthy digestion.
In their study, the researchers evaluated the prebiotic content of 8,690 foods using the pre-existing scientific literature. It was determined that about 37% of the foods in the database contain prebiotics. Dandelion greens, Jerusalem artichokes, garlic, leeks and onions contain the highest amounts of prebiotics, with around 100-240 milligrams (mg/g) per gram of product. Other prebiotic-rich foods include onion rings, boiled onions, black-eyed peas, and asparagus. They contain about 50-60 mg/g.
