Pepe Nero restaurant chef Vladimir Vasilevich, in an interview with socialbites.ca, called the most suitable currant-mint sauce for the Anna Pavlova dessert.
According to her, the slightly sour currant perfectly reveals the sweetness of the meringue based on egg white, powdered sugar and lemon juice, while the mint emphasizes the freshness and lightness of the dessert.
“To prepare the sauce, combine black currants and granulated sugar in a saucepan, put on the fire, bring to a boil and boil for 7-10 minutes until thickened. Next, the sauce should be pierced in a blender and, ideally, passed through a fine sieve to get rid of large fruit particles, ”explained the recipe for the sauce.
