According to Pushkov, many domestic establishments serve small dishes on large plates after their foreign counterparts. But the chef of the restaurant Casa Limone said that it is made abroad, so the guest can try several dishes at once.
“In Russia, restaurateurs sent chefs to such restaurants, they saw these little dishes and decided to do the same so that everyone thought they were very cool. This is not so, because people should enjoy the food first and foremost. If you come to an ordinary restaurant and they bring you small dishes on large plates, don’t go there anymore,” he said.
Pushkov also described the lack of Italian cuisine as one of the main disadvantages of Russian restaurants. The chef himself specializes in this.
“I love Italian food. Delicious, satisfying, but at the same time the same pasta can be prepared in different ways. I like to surprise people. Although there are many Italian cuisine restaurants in Russia, the chefs prepare the dishes incorrectly, they do not know what to expect when visiting. And when they come to me, I see pleasure in their eyes. and I enjoy it myself, ”added Pushkov.
