The most popular basis for okroshka among surveyed Russians was kefir. It accounts for 64% of all purchases. The dish is most popular in the regions of the North Caucasus. In Siberia, the opposite situation is observed. More than half of respondents from the region prefer kvass okroshka.

“In just the first three weeks of summer, guests of retail chain stores bought 2.1 million sets of ingredients for preparing a popular summer dish of kvass and kefir, which is equivalent to about 4,000 tons of ready-made okroshka,” say retail chain analysts. aforementioned.

On average in Russia, the cost of a set for preparing okroshka is 109.5 rubles. However, in the regions of the Rostov, Tula and Oryol regions less – 95.3 rubles.

To calculate the cost of cooking, a classic okroshka recipe based on kvass or kefir was chosen, which included boiled sausage, potatoes, eggs, fresh radishes, cucumbers, parsley, dill and green onions.
