Collagen is a large protein and the body cannot fully absorb it, so you should not expect an anti-aging effect from collagen supplements alone. Chef Sergei Leonov, founder of the online culinary academy ZOGigay, told socialbites.ca about this.
“Collagen is the basic protein of connective tissue. With age, its synthesis decreases, so the skin and muscles lose their elasticity, wrinkles appear. Nutritionists recommend filling its deficiency with the help of dietary supplements, but you should not expect an effect from them. Collagen is a large protein and the body cannot fully absorb it,” she explained.
The chef recommended adding foods high in collagen to your diet instead of nutritional supplements.
“I developed a collagen menu for my students this spring. Instead of jelly, I recommend cooking chicken ham in onion jelly or stewed veal cheeks with fried spinach,” Leonov said.
The chef also recommends paying attention to products that provide the body with collagen and those that contribute to its own production. The first mentions meat, fish and poultry.
“You have to cook from parts where there is a lot of connective tissue. A good example is the leg of veal and the drumstick ossobuco. Or an ear from a salmon head,” he suggested.
According to Leonov, the second category includes cabbage, mushrooms, legumes, soy milk and citrus fruits.
“They contain the amino acids from which collagen is made: glycine, proline and hydroxyproline. You can combine it with products containing zinc. For example, mussels, seeds and nuts,” he said.
