According to him, first of all, an overly elegant entrance to the restaurant frightens visitors, as people immediately think that the prices on the menu will be too high.
“No one wants to feel solvent enough and successful. So definitely an expensive entry point and luxurious interiors will scare off some potential customers. True, restaurant operators sometimes use this technique not to filter their audience, ”explained the expert.
The appearance of an empty hall can frighten potential customers of the restaurant; this is especially noticeable if the windows are panoramic and the room is clearly visible from the street.
“This gives the guest a signal that the restaurant is failing, bad. People don’t choose it and I don’t want to choose it either, the prospect thinks and passes,” he explained.
According to Mileenkova, people prefer familiar names when choosing restaurants to satisfy their hunger.
“At this point the customer has no demand for a new consumer experience. And most of us are conservative in our food choices, so people prefer familiar brands and ditch the unfamiliar. Meanwhile, many novice restaurateurs are running out due to advertising and PR savings,” he said.
The expert added that too creative proposals can also scare off potential guests.
“The molecular cuisine, overly creative food presentation is designed for a narrow audience, it will cause everyone to pass by and choose something more familiar and understandable,” he summed up.
