“Vegetables that are harvested and quickly frozen can contain more nutrients than fresh food that has been stored for too long,” said Yulia Khruleva.

He explained that the greatest amount of vitamins and minerals are found in fresh products harvested at the peak of maturity, but from the moment of harvest to transport to stores and sale, vegetables have time to lose their properties. That’s why, according to the nutritionist, frozen foods are “a great option for those who want to consume non-seasonal vegetables year-round.”

“Frozen vegetables are usually stored in the freezer for an average of 6-12 months. The expiry date depends on the specific product type, original date of manufacture, processing method and storage conditions. The main factor in preserving the freshness of frozen vegetables for as long as possible is to maintain their constant temperature,” concluded Yulia Khruleva.
