An alternative to chicken noodles in fasting can be soup with beans and mushrooms. Olga Samsonova, the founder of the icancook brand, shared the recipe with socialbites.ca.
Peel an onion and two carrots, cut them into small cubes and sauté in olive oil for 8-10 minutes. Cut champignons or white mushrooms (150 g) into slices, chop 3 cloves of garlic and send to a pan with vegetables. Stir in pepper, salt and medium heat and fry for another 8 minutes.
Add diced potatoes (400g), Dijon mustard (1.5 teaspoons), few bay leaves and mix well. Pour water (1.5 l) and cook for half an hour over medium heat.
Add chopped white cabbage (300 g), canned dried beans (1 can) and vegetable sauce to the soup. Reduce the heat to low, cook for another 15 minutes. Before serving, add the juice of one lemon and a handful of chopped parsley.
“If you do not like experiments, you can cook this dish according to the classic recipe: leave only vegetables and mushrooms, then you get a more traditional, familiar option,” said Olga Samsonova.
