Those who do not want to overeat on New Year’s Eve should replace the traditional Olivier with a diet salad with avocado and shrimp. Brand chef of Ersh restaurants, Aleksey Razboev, shared his low-calorie New Year’s salad recipe with socialbites.ca.

“Shrimp and avocado salad is the perfect meal for those who take care of their body and diet during the New Year’s holiday. Low-calorie, tasty and healthy – an exemplary diet salad that will decorate your table, ”said the chef.

For cooking, you will need shrimp, mixed salad, avocado, cherry tomatoes, parmesan cheese. For the sauce – walnuts, herbs, green onions, cloves of garlic, apple or wine vinegar, salt.

First, clean and rinse the shrimp.

“For really juicy, plump shrimp, I recommend sautéing them in oil with garlic. This will create a bright and pleasant scent that will add even more flavor to your salad,” Razboev suggested.

To prepare the nut sauce, chop the herbs and grind them in a blender. Lightly roast the walnuts in a pan and add them to the greens. Put the garlic in it. At the end, add some vinegar to the sauce and salt to taste. Slice the avocado and cherry tomatoes. Mix all the ingredients in a salad bowl and pour the dressing over it. Garnish with grated Parmesan while serving.
