You can diversify the menu of the New Year’s table with the help of a traditional salad in a new reading – smoked tuna under a fur coat in the form of rolls. Alexander Anoshkin, the chef of the Lark Cafe restaurant, shared the original Roll a la Russ recipe with socialbites.ca.
“I advise you to prepare for the New Year in advance and try traditional dishes – for example, with herring under a fur coat. Why not replace regular herring with cold-smoked tuna? And boring service in the form of a puff salad – in the form of rolls wrapped in a slice of fresh cucumber. It will be original, delicious, and it will take some time to cook,” he suggested.
For cooking, you will need potatoes, beets, cucumbers, carrots, red onions, cold-smoked tuna, mayonnaise, unagi sauce, red caviar, dill, egg yolk.
Boil the carrots, potatoes and beets. Cut the cucumbers into 1-1.5 mm thick slices. On top of the cucumbers lay the beets cut into identical slices. Grate the potatoes and mix with mayonnaise. In the middle, add chopped carrots and tuna. Wrap everything in a tight roll and divide into equal parts. Garnish with unagi sauce and mayonnaise. When serving, garnish with red caviar, finely chopped dill and egg yolk.
