“Already in December, I advise you to think about the dishes that will be on the New Year’s table. We have developed an unusual copy of the Olivier salad for our guests. We added salmon and red caviar to the dish, which the Moscow visitor is already familiar with.”
To prepare the salad, you will also need green peas, pickled cucumbers, boiled potatoes, boiled carrots, fresh cucumbers, homemade mayonnaise, parsley, shallots, quail eggs and green pea sprouts.
Boil potatoes and carrots in their skins, peel and cut into cubes. Repeat with cucumber. Put the chopped vegetables in a bowl, add the finely chopped shallots and parsley, green peas, season with homemade mayonnaise, salt, pepper and mix. Put the resulting salad on a plate, garnish it with thinly sliced slightly salted salmon, red caviar and green pea sprouts, ”the chef concluded.
