A new national standard will be introduced to catering establishments in Russia on how to publish wine lists. This was reported by two unnamed sources familiar with the development of the standard. RBC.
GOST was developed by the Roskachestvo Autonomous Non-Profit Organization and the Association of Restaurant Operators and Hoteliers “Federation of Restaurateurs and Hoteliers”. It was approved in November 2024 but was not made public until then. RBC reported that compliance with GOST is advisory in nature and is aimed at the convenience of customers when viewing the wine list.
According to GOST “The wine list can be printed directly at the establishment, printed on paper of any format and/or displayed electronically.”
When developing a map, it is recommended to take into account the target audience and its needs, as well as financial capabilities. In addition, the document included the division of wine lists into classic and original. First, it is recommended to enter data about where the wine is produced, which category it belongs to, the producer and its origin. The author’s wine list is compiled according to wine types and characteristics. Positions here will vary from wines made from light grape varieties to rich ones.
